Dissolve the yeast in 1/2 cup warm water to which 1 tsp. sugar has been added. Allow to rise until frothy. Warm a large bowl and sift the flour with the salt in it. Mix the yeast mixture, raisins, brandy, orange and lemon rind, lemon juice and enough of the remaining water to make a very soft dough (it should be gooey, not firm as you would do with bread). Cover and allow the dough to rise in a warm, draft-free place until doubled in bulk, approximately forty-five minutes. Drop by spoonfuls into hot oil (350 degrees) until golden on all sides. Drain on paper towels. sprinkle with vanilla sugar and serve piping hot.

2 tbsp. sugar
3-1/2 c. flour
1/2 tsp. salt
1 c. raisins
2 tbsp. brandy
grated rind of 1 orange
grated rind of 1 lemon
juice of 1 lemon
1-1/2 cup warm water
Vegetable oil for deep frying
Confectioner's Sugar
